On GM's 2019 U.S. and Canada chart, the Silverado 1500 with filter is 6.0 qt of SAE 5W-30 for the 2.7L L3B and the 4.3L LV3, and 8.0 qt of SAE 0W-20 for the 5.3L L82 or L84 and the 6.2L L87. The 2019 owner's manual capacity table matches those quarts for engine oil with filter. It lists the 5.3L and 6.2L together at 7.6 L (8.0 qt).
The owner's manual says levels above or below the acceptable range harm the engine. If the oil is above the cross-hatched area, drain the extra or have it removed. Add only enough to land in the operating range, then push the dipstick fully back in.
The same GM chart lists a Silverado LD 5.3L L83 and, for 2020, a 3.0L diesel. Those are not the four gasoline rows above. The 2019 1500 gasoline sheet stops at the four rows in the spec table.

Viscosity comes from the GM TechLink chart, which the manual page does not repeat in the text used here. The manual tells you to see the engine-compartment overview for the fill cap. That figure is not redrawn.
